RECIPE | Brownie Stuffed Chocolate Chip Cookies

Click here for the ultimate cookie recipe! Beware they are incredibly delicious, our advice is don't make a big batch because you'll eat them all and have a big cry in bed later... And to underbake them if you want them gooey in the middle.

Prep time: 2 hours

Cook time: 15 minutes


Ingredients:
♥ 1 boxed brownie mix, baked according to package directions (I used Ghirardelli Double Chocolate!)*
♥ ¾ cup unsalted butter, softened
♥ 1 cup brown sugar
♥ ¼ cup granulated sugar
♥ 1 egg
♥ 2 teaspoon vanilla extract
♥ 2 cups all purpose flour
♥ 2 teaspoon cornstarch
♥ 1 teaspoon baking soda
♥ 1 teaspoon salt
♥ 1 cup bittersweet chocolate chips


Prep:
♥ Bake brownie mix according to package directions in an 8x8 pan. Allow to cool, then cut into 25 squares (5 by 5 rows).
♥ Cream butter and sugars until light and fluffy, about 3 minutes. Add in egg and vanilla, beating until combined. Stir in dry ingredients and chocolate chips.
♥ Scoop 1.5 tablespoons of batter and flatten slightly into a thick pancake (see pictures for detail). Take a brownie square and mold it into a disk, then place on top of cookie batter. Scoop another 1.5 tablespoons of batter, flatten slightly, and place on top of brownie disk. Working between your hands, pinch the edges of the cookie batter together and flatten the entire ball of dough slightly more so it is about ¾ of an inch thick at the center. Place onto parchment paper-lined cookie sheets (you will need  Repeat with remaining dough (you will have extra brownies leftover to snack on!). Cover trays with plastic wrap and refrigerate for at least 1 hour, but up to overnight.
♥ Preheat oven to 350°F. Bake cookies for 15 minutes. They will be slightly undercooked, but will continue to cook as they cool. Allow to cool slightly before transferring to a cooling rack. Then eat all the cookies.

*Underbake your brownies you want them gooey and fudgy!

How did you get into modelling? When I got my braces off at 14, I took photos and sent them to different agencies. I got my first gig in LA!

What are the best and worst parts of modelling? The best is getting the photos back and knowing it was all worth it. And having fun on shoots. The worst experience was when I bruised my ribs once on a shoot.

Best beauty tip? If you're having a crazy eyebrow day put a bit of moisturiser on them and leave it for a bit.

Who are you following on instagram and why? @alexisren because I look up to her as a model and @sjanaelise because of the passion and love she puts into her posts.

Favourite healthy recipe? Acai bowls.

RECIPE | Milk & Cookie Shots Recipe

Dominique Ansel is the creator behind this masterpiece dessert, he also invented the cronut... trust. Switch up your weekend of vodka shots for these bad boys! After a few of these you'll probably start designing a life-changing fitness regiment you know will never happen. Worth it!

Cook time: 15 minutes


Ingredients:

♥ 2 cups all purpose flour
♥ 1/4 teaspoon baking soda
♥ 1/8 tsp salt
♥ 1/2 cup unsalted butter, room temperature
♥ 2/3 cup granulated white sugar
♥ 1/2 cup packed light brown sugar
♥ 2 large eggs
♥ 1 tsp vanilla extract
♥ 1 cup mini chocolate chips
♥ 1 cup regular chocolate chips
♥ 1 cup bittersweet chocolate chips (for chocolate coating)






Prep:

♥ Preheat the oven to 175 degrees Celsius - thoroughly grease moulds being used for baking.
♥ In a bowl of a stand mixer, cream butter and sugars until fluffy. Add in eggs and vanilla and mix. Add in flour, baking soda and salt and mix on a low speed until smooth dough forms. Stir in mini chocolate chips.
♥ Take a chunk of dough and press into the bottom of the old and around the interior sides, trying to make sure that there is an even thin layer of dough all around. Dough will be sticky to worth with. You can try refrigerating the dough for 30m to make it less sticky, or wash your hands after shaping each cookie. Clean, slightly moistened hands are much better at shaping and working with the dough.
 Wrap the bottom and sides of the glasses or tubes being placed inside the moulds with baking paper. Make sure these inner glasses/tubes are heavy to weigh down the dough. Place inside and press down so that they stay firmly inside to hold down the cookie shots.
♥ Bake for about 10-12 minutes or until the edges turn a golden brown and cookies look finished. Working quickly, remove cookies from oven and check on the interior by removing the inter glass/tube weights and baking paper. If the cookie dough is still slightly raw inside, remove the baking paper and replace glass/tube back inside. Bake for another 2-minutes. Cookies now should be fully cooked, including the interior.
♥ While cookie shots are cooling, melt chocolate on stove or in the microwave. If melting in microwave, microwave at 30-second intervals, stirring after each stop until chocolate is fully melted. Brush the interior of the cookie shots with chocolate, making sure to coat every crevice otherwise the milk will leak through. Let chocolate cool and set. Pour cold milk in when cookie shots are ready to be eaten.

RECIPE | How To Make Your Own Freakshake

So apparently people have been lining up for hours to eat one of these bad boys. We're going to cut the cue and make one ourself courtesy of Ann from HowToCookThat. They're actually super easy to whip up so click below for the recipe and video tutorial!




Ingredients:

Ganache 
125g (4.41 ounces) dark chocolate
125g (4.41 ounces) milk chocolate
125ml cream

Whipped Cream
400ml cream
1 tsp vanilla extract
Whip to peaks and place into a piping bag fitted with a star shaped nozzle.

Chocolate Brownie Freakshake:


1/2 cup or 125ml ganache
400ml milk
2 generous scoops of ice cream

Additional 1/2 cup of ganache
Additional 2 scoops of icecream for putting into the glasses.
Whipped cream
Marshmallow

Place the ganache, milk and ice cream into a blender and mix well.

Spread ganache on the inside of the glasses and around the top outside edge. Add a scoop of ice cream to each one and pour in the chocolate milkshake. Pipe high with cream then add a brownie and a marshmallow. Toast with a brûlée torch until brown and crispy.

Serving size: 2

Nutella Pretzel Freakshake


1/2 cup or 125ml ganache
400ml milk
2 generous scoops of ice cream
2 tablespoons nutella

Additional 1/2 cup of nutella
Additional 2 scoops of icecream for putting into the glasses.
Whipped cream
Pretzels

Directions:
In a blender put milk, ganache, a big spoon of nutella and ice cream. Blend well.

Smear some nutella inside the jars and around the top edge, flatten it around a bit. Then add pretzels around the top of each one. Add a scoop of ice-cream and pour in the nutella milkshake.

Pipe the cream around the top. Then add more pretzels dipped in nutella to the top.

Service size: 2

Salted Caramel Apple Pie Freakshake


400ml milk
2 generous scoops of ice cream
3 tablespoons salted caramel

additional 4 tablespoons salted caramel
whipped cream
mini apple pies (recipe)

Directions:
Blend together the milk, salted caramel and ice cream.

Add some caramel inside the jar and around the top edge. If you want it dripping down heat it with a brulee torch. Add the ice-cream and salted caramel milkshake. Place cream and an apple pie on top and drizzle with more caramel sauce.

Service size: 2

Donut Freaksake


400ml milk
4 generous scoops of ice cream
vanilla essence

additional 2 scoops of ice cream
whipped cream
Jam
Custard
Donut

Directions:
Place some jam and custard around the top of the jar. Then add ice cream and vanilla milkshake.

Top with cream, add a straw and a donut to the top.
